  • 4 fillets salmon
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a saucepan, bring the vegetable broth to a boil and add the orzo. Cook according to package instructions.
