1 cup cake flour
1 1/2 cups granulated sugar
12 egg whites
1 teaspoon cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon almond extract
Instructions
Preheat your oven to 350°F (175°C) and prepare a cupcake pan with liners.
In a mixing bowl, sift together the cake flour and half of the sugar.
In a separate bowl, beat the egg whites until frothy, then add cream of tartar and salt. Continue beating until soft peaks form.
Gradually add the remaining sugar and beat until stiff peaks form.
Gently fold in the flour mixture along with the extracts.
Fill the cupcake liners with the batter and smooth the tops.
Bake for 15-18 minutes or until lightly golden and a toothpick comes out clean.
Remove from the oven and let them cool completely.
Notes
Ensure egg whites are at room temperature for the best results.
