1 lb potato gnocchi
4 slices bacon, chopped
1 medium onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 cups shredded cheddar cheese
1 tsp thyme

Instructions
In a large pot, cook the bacon until crispy. Remove and set aside.
In the same pot, add onion and garlic, cooking until softened.
Add chicken broth and bring to a boil.
Stir in the gnocchi and cook for 2-3 minutes.
Reduce heat, add heavy cream, and stir in the cheddar cheese until melted.
Season with thyme, salt, and pepper. Top with crispy bacon before serving.
