Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, cooked rice, black beans, corn, salsa, cumin, chili powder, garlic powder, and salt.
  3. Transfer the mixture to a greased 9×13 inch baking dish.
  4. Top with shredded cheese.
  5. Bake in the preheated oven for 20-25 minutes, or until cheese is bubbly and golden.
  6. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add diced bell peppers or jalapeños to the mixture.
  • Serve with sour cream and avocado on top.
