  • 1 pound chicken, diced
  • 4 slices turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup frozen peas
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the onions, carrots, and celery and sauté until softened.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the flour and cook for one minute.
  5. Slowly pour in the chicken broth while stirring to avoid lumps.
  6. Bring to a boil, then reduce heat and add the chicken, thyme, salt, and pepper.
  7. Simmer for 15 minutes.
  8. Stir in the heavy cream and frozen peas, and cook for another 5 minutes.
  9. Serve hot with crusty bread.
