A warm and comforting chicken soup recipe to soothe your soul.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups egg noodles (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté until translucent.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the shredded chicken, thyme, bay leaf, salt, and pepper.
  6. Reduce heat and let simmer for 20 minutes.
  7. If using, add the egg noodles and cook until tender.
  8. Remove the bay leaf and serve hot.

Notes

  • Feel free to add your favorite vegetables.
  • This soup can be frozen for up to 3 months.
