- 1 cup cooked turkey bacon, chopped
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 red bell pepper, diced
- 1 package eggroll wrappers
- 1 egg, beaten (for sealing)
- In a large bowl, combine turkey bacon, black beans, corn, cheese, cumin, chili powder, and red bell pepper.
- Lay an eggroll wrapper flat and place 2 tablespoons of the filling in the center.
- Fold the sides over the filling, then roll tightly to seal. Use beaten egg to seal the edges.
- Heat oil in a pan over medium heat and fry the eggrolls until golden brown.
- Drain on paper towels and serve warm.
