  • 1 cup cooked turkey bacon, chopped
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 red bell pepper, diced
  • 1 package eggroll wrappers
  • 1 egg, beaten (for sealing)

Instructions

  1. In a large bowl, combine turkey bacon, black beans, corn, cheese, cumin, chili powder, and red bell pepper.
  2. Lay an eggroll wrapper flat and place 2 tablespoons of the filling in the center.
  3. Fold the sides over the filling, then roll tightly to seal. Use beaten egg to seal the edges.
  4. Heat oil in a pan over medium heat and fry the eggrolls until golden brown.
  5. Drain on paper towels and serve warm.

Notes

  • These eggrolls can be made ahead of time and frozen.
  • For a spicier version, add jalapeños to the filling.
