  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1 cup chocolate chips
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the sugar, brown sugar, eggs, milk, oil, vanilla, and peppermint extracts.
  4. Combine the wet and dry ingredients until just mixed, then fold in the chocolate chips.
  5. Fill the cupcake liners about 2/3 full with batter and sprinkle the top with crushed candy canes.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • For a more intense peppermint flavor, add additional peppermint extract.
  • Can be topped with whipped cream and extra crushed candy canes for decoration.
