  • 1 can coconut milk
  • 2 tablespoons curry paste
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon turmeric
  • salt to taste
  • fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
  3. Add curry paste and turmeric; cook for another 2 minutes.
  4. Stir in coconut milk and bring to a simmer.
  5. Place cod fillets in a baking dish and pour the coconut curry sauce over the top.
  6. Add bell peppers.
  7. Bake for 20-25 minutes until cod is flaky.
