4 pieces cod fillets
1 can coconut milk
2 tablespoons curry paste
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, sliced
1 tablespoon fresh ginger, grated
1 teaspoon turmeric
salt to taste
fresh cilantro for garnish
Instructions
Preheat the oven to 375°F (190°C).
In a pan, heat olive oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
Add curry paste and turmeric; cook for another 2 minutes.
Stir in coconut milk and bring to a simmer.
Place cod fillets in a baking dish and pour the coconut curry sauce over the top.
Add bell peppers.
Bake for 20-25 minutes until cod is flaky.
Garnish with fresh cilantro before serving.
Notes
For a spicier dish, add more curry paste to taste.
