  • 4 pieces cod fillets
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 cup spinach
  • 2 tablespoons cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together coconut milk, curry paste, fish sauce, lime juice, garlic, and ginger.
  3. Place cod fillets in a baking dish and pour the coconut curry mixture over them.
  4. Bake for 20-25 minutes until the cod is cooked through.
  5. Add spinach and cilantro in the last 5 minutes of baking.
  6. Serve hot with rice or bread.
