3 ripe bananas
1/3 cup melted butter
1 teaspoon baking soda
pinch of salt
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
2 teaspoons ground cinnamon
1/2 cup chopped walnuts (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, mash the ripe bananas with a fork until smooth.
Stir the melted butter into the mashed bananas.
Add baking soda and salt, then mix in the sugar, egg, and vanilla.
Stir in the flour until just combined.
In a small bowl, mix the cinnamon and sugar for the swirl.
Pour half of the batter into a greased loaf pan, sprinkle with half of the cinnamon-sugar mixture, then add the remaining batter and top with the rest of the mixture.
Use a knife to gently swirl the two mixtures together.
Bake for 60-65 minutes or until a toothpick comes out clean.
Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
For added flavor, try using brown sugar instead of white sugar.
Ensure bananas are very ripe for maximum sweetness.
