  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (10 oz) green enchilada sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup cilantro, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Add the shredded chicken, chicken broth, and green enchilada sauce.
  4. Stir in the black beans and corn.
  5. Bring to a simmer and cook for 15 minutes.
  6. Stir in the heavy cream, cumin, salt, and pepper.
  7. Remove from heat and add cilantro before serving.
