- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 6 cups chicken broth
- 1 cup heavy cream
- 2 cups chopped spinach
- 1 cup diced tomatoes
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- Salt and pepper to taste
- In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into meatballs.
- In a large pot, heat some oil and sauté the onion, carrots, and celery until softened.
- Add the meatballs and cook until browned.
