Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 cups chopped spinach
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into meatballs.
  2. In a large pot, heat some oil and sauté the onion, carrots, and celery until softened.
  3. Add the meatballs and cook until browned.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and stir in the diced tomatoes and spinach.
  6. Add the heavy cream and let simmer for 15-20 minutes.
  7. Adjust seasoning and serve hot.
