  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 teaspoons Italian seasoning
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 cups spinach
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, Italian seasoning, and garlic.
  3. Form meatballs from the mixture and place them on a baking sheet.
  4. Bake the meatballs for 20 minutes.
  5. In a pot, combine beef broth, diced tomatoes, and bring to a boil.
  6. Add the meatballs to the pot and simmer for 10 minutes.
  7. Stir in the heavy cream and spinach, cooking until heated through.
  8. Season with salt and pepper.
