  • 2 pounds boneless chicken thighs
  • 1 cup bourbon
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken thighs in the crock pot.
  2. In a bowl, mix bourbon, soy sauce, brown sugar, ketchup, garlic, ginger, and black pepper.
  3. Pour the mixture over the chicken.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Once cooked, remove chicken and shred it.
  6. Mix cornstarch with water and stir into the sauce in the crock pot. Cook for an additional 15-20 minutes until thickened.
  7. Return the shredded chicken to the crock pot, stir, and serve.
