- 2 pounds boneless chicken thighs
- 1 cup bourbon
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
- Place chicken thighs in the crock pot.
- In a bowl, mix bourbon, soy sauce, brown sugar, ketchup, garlic, ginger, and black pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, remove chicken and shred it.
- Mix cornstarch with water and stir into the sauce in the crock pot. Cook for an additional 15-20 minutes until thickened.
- Return the shredded chicken to the crock pot, stir, and serve.
