A warm and comforting chicken noodle soup that is creamy and delicious.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chicken breasts and cook until golden brown, about 5-7 minutes on each side.
  3. Remove chicken from pot and set aside. In the same pot, add carrots and celery and sauté for about 5 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add egg noodles and cook according to package instructions.
  6. Meanwhile, shred the cooked chicken and return it to the pot.
  7. Stir in the heavy cream and thyme.
  8. Season with salt and pepper to taste.

Notes

  • This soup can be made in advance and reheats well.
  • Feel free to add other vegetables like peas or corn.
