- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups egg noodles
- 1 cup heavy cream
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon thyme
- salt to taste
- pepper to taste
- In a large pot, heat olive oil over medium heat.
- Add the chicken breasts and cook until golden brown, about 5-7 minutes on each side.
- Remove chicken from pot and set aside. In the same pot, add carrots and celery and sauté for about 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add egg noodles and cook according to package instructions.
- Meanwhile, shred the cooked chicken and return it to the pot.
- Stir in the heavy cream and thyme.
- Season with salt and pepper to taste.

- This soup can be made in advance and reheats well.
- Feel free to add other vegetables like peas or corn.
