A warm and creamy chicken noodle soup that is easy to make and perfect for comforting few.

Ingredients

  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 8 ounces egg noodles
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, sauté until softened.
  2. Stir in garlic and cook for an additional minute.
  3. Add chicken broth and bring to a boil. Stir in chicken and thyme.
  4. Add noodles and cook until tender.
  5. Reduce heat, stir in heavy cream, and season with salt and pepper.
  6. Serve hot.

Notes

  • For a healthier option, replace heavy cream with milk.
  • Leftover turkey can be used instead of chicken.
