A delicious twist on traditional Mexican street corn, featuring turkey bacon for a healthier option.

  • 4 ears corn on the cob
  • 4 slices turkey bacon
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Cook turkey bacon in a skillet until crispy, then crumble it into pieces.
  2. Preheat grill to medium-high heat.
  3. Grill corn for about 10-15 minutes, turning occasionally until charred.
  4. In a bowl, mix mayonnaise, sour cream, chili powder, and garlic powder.
  5. Once corn is done, brush with the mixture and coat with cotija cheese and crumbled bacon.
  6. Garnish with cilantro and serve with lime wedges.

Notes
