- 2 cups grated zucchini
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup chopped walnuts (optional)
- 2 cups powdered sugar
- 4 tablespoons unsalted butter
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, mix together grated zucchini, granulated sugar, brown sugar, and vegetable oil.
- Add eggs, one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in walnuts if using.
