  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts (optional)
  • 2 cups powdered sugar
  • 4 tablespoons unsalted butter
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, mix together grated zucchini, granulated sugar, brown sugar, and vegetable oil.
  3. Add eggs, one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in walnuts if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool completely before frosting.
  9. To prepare the frosting, beat together powdered sugar, butter, milk, and vanilla until smooth.
  10. Spread the frosting over the cooled bars before serving.
