Instructions

  1. Preheat oven to 350°F (175°C), and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, and vegetable oil.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Add the eggs and vanilla extract, mixing until smooth.
  6. Pour the batter into the prepared baking pan and spread evenly.
