  • 4 chicken thighs
  • 2 pounds baby potatoes
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, oregano, salt, and pepper.
  3. Add chicken thighs and baby potatoes to the bowl, tossing to coat.
  4. Transfer to a baking dish and sprinkle parmesan cheese over the top.
  5. Bake for 45 minutes or until chicken is cooked through and potatoes are tender.
