A delicious and healthy meal option featuring chicken and sweet potatoes served over rice.

Ingredients

  • 2 cups cooked brown rice
  • 1 pound boneless, skinless chicken breasts
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 cups broccoli florets

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into small cubes.
  3. In a bowl, toss chicken with olive oil, garlic powder, paprika, salt, and pepper.
  4. Spread chicken and sweet potatoes on a baking sheet and bake for 20-25 minutes.
  5. Add broccoli during the last 10 minutes of baking.
  6. Serve chicken and vegetables over brown rice.
