This Instant Pot Lasagna Soup offers a delicious twist on classic lasagna, featuring turkey bacon for a healthier option.

  • 8 ounces lasagna noodles
  • 6 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 24 ounces marinara sauce
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 can diced tomatoes
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Press the sauté button on the Instant Pot and add the turkey bacon. Cook until crispy, then remove and chop.
  2. Add olive oil, onion, and garlic to the pot. Sauté until the onion is translucent.
  3. Add ground beef or turkey to the pot and cook until browned.
  4. Stir in marinara sauce, chicken broth, Italian seasoning, and diced tomatoes.
  5. Break the lasagna noodles into quarters and add them to the pot.
  6. Close the lid and set to manual, cooking on high pressure for 5 minutes.
  7. Quickly release the pressure, then stir in the ricotta cheese, half of the mozzarella, and the chopped bacon.
  8. Top with remaining mozzarella and Parmesan cheese, and let it melt before serving.

Notes

  • For extra flavor, add red pepper flakes.
  • You can substitute the turkey bacon with regular bacon if preferred.
