  • 1 tablespoon olive oil
  • 4 ounces turkey bacon, chopped
  • 8 ounces chicken ham, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Turn on the Instant Pot and select the sauté function. Add olive oil, turkey bacon, and chicken ham; cook until browned.
  2. Add onion and garlic; cook until translucent.
  3. Stir in crushed tomatoes, chicken broth, lasagna noodles, and Italian seasoning.
  4. Close the lid and set the valve to sealing. Cook on high pressure for 5 minutes.
  5. Once done, quick release the pressure. Stir in spinach, ricotta, and mozzarella cheese until melted.
  6. Serve hot and enjoy your delicious lasagna soup!

Notes

  • For extra flavor, add a pinch of red pepper flakes.
