A delicious layered Mediterranean vegetable lasagna featuring creamy ricotta cheese. Perfect for weeknight dinners or special occasions.

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 medium bell pepper, diced
  • 1 cup spinach leaves
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, cook lasagna noodles according to package instructions; drain.
  3. In a medium bowl, combine ricotta cheese, garlic, Italian seasoning, salt, and pepper.
  4. In a 9×13 inch baking dish, spread a thin layer of marinara sauce.
  5. Layer with cooked noodles, ricotta mixture, zucchini, yellow squash, bell pepper, and spinach.
  6. Repeat layers until all ingredients are used, ending with mozzarella and Parmesan on top.
  7. Cover with foil and bake for 25 minutes.
  8. Remove foil and bake for an additional 15 minutes or until cheese is bubbly.
  9. Let sit for 10 minutes before serving.

Notes

  • For extra flavor, add fresh basil between layers.
  • This dish can be made ahead of time and refrigerated before baking.
