Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion chopped
  • 4 cloves garlic minced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 1 lemon juiced and zested
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chicken and cook until browned on both sides.
  3. Set chicken aside and add carrots, celery, onion, and garlic to the pot.
  4. Sauté until the vegetables are tender.
  5. Pour in the chicken broth and bring to a boil.
  6. Add orzo and cook according to package instructions.
  7. Return the chicken to the pot and stir in lemon juice, zest, and spinach.
  8. Season with salt and pepper before serving.

Notes
