- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- 1 cup heavy cream
- 1/2 cup peas
- Salt to taste
- Black pepper to taste
- In a large pot, heat some oil over medium heat and sauté the onions, garlic, carrots, and celery until softened.
- Add in the shredded chicken, chicken broth, thyme, and rosemary. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in the heavy cream and peas, and season with salt and black pepper. Heat through.
