- 1 pound turkey bacon
- 2 cups frozen mixed vegetables
- 4 cups diced potatoes
- 2 cups shredded cheese
- 1 can cream of mushroom soup
- 1/2 cup milk
- 1 teaspoon garlic powder
- Preheat the oven to 350°F (175°C).
- Cook the turkey bacon until crispy, then crumble it into pieces.
- In a large bowl, mix together the cream of mushroom soup, milk, and garlic powder.
- Add in the diced potatoes and frozen mixed vegetables, and stir until well combined.
- Fold in the crumbled turkey bacon and half of the shredded cheese.
- Transfer the mixture to a greased baking dish and top with the remaining cheese.
- Bake uncovered for 45 minutes, or until the potatoes are tender.
