Pozole Verde de Pollo is a comforting and flavorful soup that is perfect for family gatherings or a cozy weeknight dinner.

  • 1 pound chicken, cut into pieces
  • 6 cups chicken broth
  • 2 cups hominy, drained and rinsed
  • 1 cup tomatillos, husked and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 jalapeños, sliced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat the chicken broth over medium heat.
  2. Add the chicken pieces and cook until they are no longer pink.
  3. Add the chopped tomatillos, onion, garlic, and jalapeños to the pot. Stir well.
  4. Season with cumin, oregano, salt, and pepper.
  5. Simmer for 30 minutes until flavors meld together.
  6. Add the hominy and cook for an additional 10 minutes.
  7. Stir in fresh cilantro before serving.

Notes

  • Adjust the level of spiciness by adding more or less jalapeños.
  • Serve with avocado, radishes, and lime wedges for added flavor.
