  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 whole wheat pitas
  • 1 cup lettuce, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup herby ranch dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the diced chicken, olive oil, garlic powder, paprika, salt, and pepper. Mix until well coated.
  3. Spread the chicken mixture onto a sheet pan in a single layer.
  4. Bake for 20-25 minutes or until the chicken is cooked through.
  5. While the chicken is baking, prepare the pitas by warming them in the oven for 5 minutes.
  6. Once the chicken is done, assemble the pitas by layering lettuce, tomatoes, cucumbers, and chicken, drizzling with herby ranch dressing.
