- 4 large baking potatoes
- 1 pound ground turkey
- 5 slices turkey bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 cup beef broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Preheat oven to 400°F (200°C).
- Wash and prick the baking potatoes with a fork. Bake for 45-60 minutes or until tender.
- In a skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and drain on paper towels.
- In the same skillet, add ground turkey, onion, and carrots; cook until meat is browned and vegetables are tender.
- Stir in peas, tomato paste, beef broth, thyme, garlic powder, salt, and pepper. Simmer for 10 minutes.
- Once the potatoes are done, slice them open and fluff the insides with a fork.
- Spoon the turkey mixture into the potatoes and top with cheese.
- Return to the oven for 10 minutes, or until cheese is melted and bubbly.
Notes
- For extra flavor, add Worcestershire sauce to the turkey mixture.
- Feel free to use leftover cooked turkey or chicken.
