  • 4 large baking potatoes
  • 1 pound ground turkey
  • 5 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and prick the baking potatoes with a fork. Bake for 45-60 minutes or until tender.
  3. In a skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and drain on paper towels.
  4. In the same skillet, add ground turkey, onion, and carrots; cook until meat is browned and vegetables are tender.
  5. Stir in peas, tomato paste, beef broth, thyme, garlic powder, salt, and pepper. Simmer for 10 minutes.
  6. Once the potatoes are done, slice them open and fluff the insides with a fork.
  7. Spoon the turkey mixture into the potatoes and top with cheese.
  8. Return to the oven for 10 minutes, or until cheese is melted and bubbly.

Notes

  • For extra flavor, add Worcestershire sauce to the turkey mixture.
  • Feel free to use leftover cooked turkey or chicken.
