  • 4 large russet potatoes
  • 1 pound ground beef or lamb
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 2 cups shredded cheddar cheese
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the russet potatoes with a fork; bake for about 1 hour or until soft.
  3. In a skillet, cook the ground beef or lamb over medium heat until browned.
  4. Add the frozen peas and carrots, beef broth, tomato paste, Worcestershire sauce, and garlic powder to the skillet; simmer for 10 minutes.
  5. Once the potatoes are done, cut them open and fluff the insides with a fork.
  6. Add butter, salt, and pepper to the potato insides, then spoon the meat mixture on top.
  7. Sprinkle shredded cheddar cheese over the top and return to the oven for an additional 10 minutes until the cheese is melted.
