A delicious and hearty slow cooker recipe that combines classic Cajun flavors with turkey bacon for a healthy twist on a traditional dish.

  • 1 pound dried red beans
  • 4 cups water
  • 2 bay leaves
  • 1 onion, diced
  • 2 stalks celery, diced
  • 1 green bell pepper, diced
  • 4 garlic cloves, minced
  • 4 ounces turkey bacon, diced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 cups cooked rice

Instructions

  1. Rinse and sort the red beans, then add them to the slow cooker.
  2. Pour in the water and add the bay leaves, onion, celery, bell pepper, garlic, turkey bacon, Cajun seasoning, black pepper, and salt.
  3. Stir the ingredients together, cover, and cook on low for 6 to 8 hours or until the beans are tender.
  4. Once cooked, remove the bay leaves and serve over cooked rice.

Notes

  • For a spicier flavor, add additional cayenne pepper or hot sauce to taste.
  • Let the dish cool completely before storing in an airtight container.
