  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup chopped onions
  • 1/4 cup chopped cilantro
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin

Instructions

  1. In a bowl, mix shredded chicken, enchilada sauce, onions, garlic powder, and cumin.
  2. Soften tortillas by briefly heating them. Fill each tortilla with the mixture and roll them up.
  3. Place rolled tortillas in the slow cooker. Pour remaining enchilada sauce on top and sprinkle cheese.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  5. Garnish with cilantro before serving.
