1 cup sushi rice
2 cups water
1 pound salmon fillet
2 tablespoons soy sauce
1 tablespoon sriracha
1/4 cup mayonnaise
1 teaspoon sesame oil
1/4 cup chopped green onions
1 sheet nori, cut into strips
Instructions
Preheat the oven to 375°F (190°C).
Rinse the sushi rice under cold water and combine with water in a pot. Bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes until tender.
While the rice is cooking, bake the salmon fillet for 15-20 minutes or until cooked through.
In a bowl, mix together soy sauce, sriracha, mayonnaise, sesame oil, and chopped green onions.
Once the salmon is cooked, flake it and combine it with the sauce mixture.
Spread the cooked rice in a baking dish and top with the salmon mixture.
Sprinkle nori strips on top and bake for an additional 10 minutes.
