  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup diced strawberries
  • 1/2 cup diced mango

Instructions

  1. Preheat the oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. Add the softened butter to the dry ingredients and mix until crumbly.
  4. In another bowl, whisk together the eggs and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Gently fold in the diced strawberries and mango.
  7. Divide the batter into the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before frosting or serving.
