  • 200 grams rice noodles
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 cup mushrooms sliced
  • 1 bell pepper sliced
  • 2 cups spinach
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • fresh cilantro for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat.
  3. Add the onion and garlic, sauté until fragrant.
  4. Stir in the red curry paste and cook for an additional minute.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the coconut milk, mushrooms, and bell pepper. Cook for 5-7 minutes.
  7. Stir in the spinach, soy sauce, and lime juice.
  8. Serve the soup over the cooked noodles and garnish with fresh cilantro.

Notes

  • For a spicier kick, add more red curry paste.
