Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups beef broth
  • 1 onion diced
  • 4 dried guajillo peppers
  • 2 bay leaves

Instructions

  1. Season the beef with chili powder, garlic powder, cumin, salt, and black pepper.
  2. Place the beef in the crockpot along with the beef broth, onion, guajillo peppers, and bay leaves.
  3. Cook on low for 8 hours or until the beef is tender.
  4. Remove the beef, shred it, and return it to the pot.
  5. Serve the birria in tacos with your choice of toppings.

Notes

  • For extra flavor, marinate the beef overnight.
  • You can also add carrots and potatoes to the crockpot for a heartier meal.
