Ultimate Quick and Easy Chicken Enchiladas are perfect for a flavorful family meal that can be prepared quickly.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1/2 cup sour cream
  • 1 onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the chicken, half of the enchilada sauce, half of the cheese, onion, cumin, garlic powder, and salt.
  3. Spoon the mixture evenly onto the tortillas, roll them up, and place them seam side down in a greased baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  5. Bake for 20-25 minutes until the cheese is bubbly and golden.
  6. Serve hot with a dollop of sour cream on top.

Notes

  • For extra spice, add jalapeños to the filling.
