A delightful recipe for quick and easy chicken enchiladas that the whole family will love.

  • 2 cups shredded cooked chicken
  • 1 cup salsa
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 can black beans, drained
  • 1 teaspoon cumin

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chicken, salsa, and black beans.
  3. Warm the tortillas in the microwave for 30 seconds to make them pliable.
  4. Scoop the chicken mixture into each tortilla and sprinkle with cheese.
  5. Roll the tortillas and place them seam-side down in a baking dish.
  6. Top with remaining salsa and cheese.
  7. Bake for 20 minutes until cheese is melted and bubbly.
