A quick and easy recipe for chicken enchiladas that will become your new favorite!

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the shredded chicken, enchilada sauce, cumin, garlic powder, and salt.
  3. Soften the tortillas in the microwave for about 30 seconds.
  4. Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll them up.
  5. Place the rolled tortillas in a baking dish, seam side down.
  6. Top with remaining enchilada sauce and cheese.
  7. Bake for 20 minutes or until the cheese is bubbly.
  8. Let cool for a few minutes before serving.
